Oozy Cheesy Pasta

It's been a while since I've posted anything dealing with food. Over the weekend, I made Jamie Oliver's Oozy Cheesy Pasta for the whole family.

My version, as usual, contained a few extra items. I added pancetta, sweet Italian sausage, peppers, and shaved parsnips strips ( which I used a veggie peeler, as in this recipe).  For the cheese, I used Parmesan and some Fontina and chose to use the creme fraiche rather than the mascarpone. I omitted the walnuts as well as the garlic but added more Thyme to the fixings as well as the topping.

Here's his recipe:

Ingredients
  • sea salt
  • 3 heaped tablespoons mascarpone cheese or crème fraîche
  • 100 g mixed leftover cheese (a little less than a cup)
  • 250 g dried taglierini
  • extra virgin olive oil
  • For the pangritata:

  • 2 slices of quality sourdough bread
  • 1 clove of garlic
  • 1 sprig of fresh rosemary, thyme or marjoram, leaves picked
  • 5 shelled walnuts
  • olive oil

Method
After all the hard work of your epic Christmas dinner, you need something that's comforting and delicious up your sleeve, which you can bosh together without too much hassle. This recipe is great for using up any leftover cheese from your Christmas cheeseboard – I tend to chuck in a mixture of hard, soft, strong and mild cheeses, but go easy on the blue cheese (that stuff can be strong!).

To make the pangritata, lightly toast the sourdough. Peel the garlic, then blitz in a food processor with the toasted bread, herbs and walnuts until fine. Preheat a non-stick frying pan over a medium heat, add a drizzle of olive oil, then add the pangritata and fry for around 5 minutes, or until golden and crisp.

Meanwhile, bring a large pan of salted water to the boil, then reduce the heat to low and place a large heatproof bowl on top. Add the mascarpone or crème fraîche to the bowl along with the leftover cheeses, crumbling or grating any harder varieties first, then stir until melted. Carefully remove the bowl from the heat and set aside, then turn the heat up to high. Once the water is boiling, add the pasta and cook according to packet instructions. Drain, reserving a cupful of cooking water, then add to the bowl of melted cheese and toss to coat, adding a splash of the reserved cooking water to loosen, if needed.

Transfer to a serving platter, drizzle over a little extra virgin olive oil, sprinkle the crispy pangritata on top and serve right away.

Enjoy!

Oversize Me!

There is something so deliciously stylish about oversized items. They are so cozy and often catch my attention. I know this style is not for everyone or even that some people find that oversized clothing is silly. But if you can wear it and pull it off with ease… Go for It!  Here are some of my favorites:

Indigo Blues

Lately, I've had a thing for the color Indigo. I mean think about it, it's almost a forgotten color. It's in the rainbow but when we draw one it's always left out. I decided to look up the meaning behind Indigo and here is what I found:

If Your Favorite Color is Indigo

  • With indigo as your favorite color, you are honest, compassionate and understanding. Integrity is extremely important to you.
  • You need structure in your life - organization is important to you and you can be quite inflexible when it comes to order in your life.
  • You may sometimes be moody and introspective.
  • You love law and order - justice is important to you - you'll defend people's rights until the end.
  • You love creating drama in your life.
  • You are impartial and fair, defending the rights of others to the end.
  • You can be quite the dramatist, making a mountain out of a molehill, when you are stressed.

Hmmm, very interesting….    Anyway, I've found the color rather intriguing for awhile often pinning items on Pinterest.

Then one day we came across a store in Corona Del Mar called Jux-ta-po-sit-ion where they had a huge assortment of indigo. Unfortunately, it was very pricey.

I started looking on Ebay for indigo fabric for sale and though I found some, the timing was just wrong. I think I'm drawn to Indigo because it reminds me of classic British decorating. I often would see touches of indigo when looking through British magazines. I classic Spode ware pitcher here, or a well-loved seat there.

It just meant home to me. I've slowly added indigo items into my home.

Including the star quilt found above. The best is a book was issued dedicated to Indigo that I received for Christmas:
A fantastic book to add to your collection with beautiful photos. AND then when I went to the mailbox the other day I found this:

Oh, Happy Day!!!

Well, I didn't really think I could say so much about a color.
Do you have a favorite color?

The Holiday Rush…..

The other day I received a text message from my Facebook page saying, "my fans missed me." Awww, I feel so loved. Yes, this holiday season got the best of me and something just had to be dropped. This beginning our first holiday with JDQ, we went hog wild! We really wanted him to be immersed in the holiday spirit.  N and I took JDQ to see Santa right after Thanksgiving; no line. He was completely in awe of the camera; he just stared at it. Finally towards the end, he turned to look at who was holding him….  "Wahhhh!" Ok, photo shoot IS over. We did pick three photos, this is my favorite:

It reminds me of this song:

Here are some scenes from around the house…

Among other things, we took JDQ to see Christmas lights, though most of the time he fell asleep in the car. Went shopping :), listened to Christmas music (Jingle Bells, Dominic the Donkey and March of the Toys were his favorites). Exchanged gifts with friends and unwrapped presents. Though they were someone else's…

I must say, it was fun. The best was waiting for Santa to arrive. And boy was JDQ surprised. As usual he woke early for a morning bottle. Luckily, it was still dark and I was able to keep the lights off. As he ate, he did notice somethings that Santa left behind but in the dark he wasn't quite able to make out what they were. For the past week, he has been playing with different items each day, its been great seeing him enjoy himself. Next year, will be even more magical and I'm already counting down the days!

We hope everyone had a magical time!
